These energy bars are super easy to make and so delicious.
At 85 calories each they are perfect for a healthy snack in between meals. They are packed with delicious dried fruit, nuts and dark choc for a subtle sweet hit plus added chia goodness.
The recipe base comes will all ingredients measured and ready to throw into a good quality food processor and blend to a smooth mixture that is starting to clump together. If your mixture is too crumbly, it needs more processing and you may need to add a little water or fruit juice. Note raw dates may contain the occasional pit.
Once blended, empty out the mixture into a loaf tin lined with alfoil and use a potato masher to press down into the corners to have a smooth flat, compact mixture. Chill for 2 hours, peel off alfoil and cut into mini bars. The 500g pack makes 24 bars and they keep in the fridge for up to 6 weeks.
